Vegetables are one of the healthiest foods you can eat. They come from different parts of plants—roots, stems, leaves, flowers, and seeds—and are full of vitamins, minerals, and fiber. Vegetables are important for staying strong, healthy, and full of energy. There are many kinds of vegetables, and they come in all colors and flavors: Root vegetables like carrots, beets, and potatoes grow underground.
